This coffee from the Yirgacheffe region is the result of the passion and dedication of the Konga Cooperative, a member group within the larger Yirgacheffe Coffee Farmers Cooperative Union (YCFCU). These 2,400 smallholder farmers distinguish themselves through their impeccable attention to detail in processing, as well as through their commitment to giving back to their greater community, evidenced in good works like renovating a local primary school and providing new school supplies.
This lot is built from wild Ethiopian heirloom varietals in the Woreda Zone of Gedeo, chosen from the forest and transplanted to small gardens where farmers pick only the ripest cherries. It grows at an altitude of 1,900-2,300 meters above sea level, and is harvested from October to February. The cherries are then hand-sorted, separating out overripe and underripe cherries, and then delivered to the Konga washing station.
At the mill, the coffee is depulped, sorted for density, and fermented in fresh water for 24-36 hours. The coffee is then washed in clean water and transferred to another tank for a 24-hour post-wash soak. It is dried for 1-2 weeks on cloth drying beds, which are covered with plastic at midday and at night to control moisture.
